I do that every month.
If you go to the website I maintain for my game, you will see I have a published "after action report" for every game played.
The url to the campaign history page is

From there, you can click on the headings to open each story arc.
And, from there, you can select each After Action Report
From there, you can read how I edited the audio recorded during each game.
Yes, it takes a good deal of effort on my part.
But it works out well for researching past events when they become important in current play, as memories, or for other reasons
I must admit, the "transcription" is done by listening to the recorded playback and then "typing what matters"...so, the jokes and other stuff get omitted. And when two or more people are talking at the same time...then, I have to clarify or get what is important after having told the players to speak one at a time during the actual game play.
