Food production - square meters and cubic meters

I've got world tamers and I'm in the process of setting up some colonies using that information.

The problem is I plan to have several archolgies that have enclosed hydrophic/yeast/ect farms.

World tames give required square kilometers -- what would be a good hieght for these "food factories", standard 1.5 meters, 3, 4.5 9 something higher?

Imput/suggestions/acutal experence with/ would be greatly apprecated.

Thanks, I'm thinking of drawing out the food production section of an archology and wanted some input. Now all I have to do is "conceptualize" what will be where.
