I would suggest that the main use for meson bays is orbital artillery.
Good point. An assault ship could power a few meson bays when they do not manoeuvre.

I have always vaguely considered most ortillery to be simply dropping things. My assault squadrons tend to be extremely economical, given the large volume required to transport a single division, much less the troops needed to invade a defended HiPop world.

In this specific case, because they can easily be hidden just mounting them inside the shull, as they can be fired from there, with no extrena sighn of its existence (not even a pop-up turret).
 
Not necessarily.

A meson gun fires twin particle accelerator beams, at the intersection of which the mesons are produced and then go on their merry way.

Mesons are created by the collision of an electron and a positron, in the
converging beams from two particle accelerators.

It could be the particle beams require a bit of space in front of them, as suggested by the fluff that accompanies the Tigress in S9.

It would mean deep site meson guns would need to be built in large caverns to allow for the particle beams before they converge.

It has its place, but don't see much use for them when you want to take a ship intact and resellable for a bank who wants to claw back its investment.
