Does anyone know what's supposed to be inside the big dorsal fin of the AHL? Jump fuel? Something else?

Supplement 5 says that the maneuver drives and most of the fuel are in the fins, but does not specify which fins (it says, "rear farings").

I would think the fin contains fuel, but AFAIK there's no canon to positively confirm it.

I agree with The Oz on this one. If we knew where the attachment points were or at what deck the fairings started we could do the math and calculate how much fuel is left but it is probably fuel in the Fin. Probably some Avionics as well, rear radar/ladar antenna that sort of stuff. Like the tail of many current fighters includes an IR detector (So you can detect a missile launch on your six).
