Traditional standard that is made official on worlds with Vilani bureaucratic influence. It would be part of the business and health department licensing process. Because Vilani.

Anywhere from low law level "advertising" through a bit more official weight than the modern day Kosher or Halal labeling, to "you don't get a service kitchen license without proving you have fully trained Shugilii on staff". Depends on Law Level and the degree of Vilani influence.

I thought Vilani were big on fungi so tons of mushroom type dishes. Perhaps alien versions of truffle hunts with exotic pig analogues..,
